One of the cruelest realities about salad is that most of the ones I like are very fattening, especially one of my favorites- Caesar salad. It’s simple and easy and filled with cheese and carbs, probably one of the reasons why I like it so much. I started to get a craving for it and I wanted to see if I could make a low fat, dairy free version. I’m not vegan, and I am not eliminating cheese from my life, but I do want to significantly reduce my dairy intake. My goal for this year is healing and I know part of that healing is what put in my mouth. I am trying to eat more vegetables but I still want to enjoy my food. I like enjoying food and I know I will have more success if I do.

I found this delicious recipe for vegan Caesar dressing. It’ super easy to make and doesn’t take a lot of time. I made some tweaks for my taste and wanted to share it with you. I added some gluten free croutons and tiny bit of vegan parmesan and devoured it in two days. I ate it with the most delicious herb roasted chicken I threw together and had a food experience. Anyway, I hope you enjoy it.

**You can also use nutritional yeast as an alternative to vegan parmesan.

Vegan Caesar Dressing Recipe:


  • 1 tbsp flax seeds + 3 tbsp water
  • 2 small clove of garlic
  • 2 dill pickles
  • 8 tbsp of vegan Parmesan cheese
  • 5 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tbsp soy sauce or tamari
  • 1 tbsp apple cider vinegar
  • 1 tsp prepared mustard
  • Black Pepper to taste
  • 1/8 tsp of salt to taste


  1. Blend the flax seeds and the water in a blender. Let stand for 5 minutes.
  2. Add the rest of the ingredients and blend until smooth.
  3. Store the dressing in the fridge.
